A food and wine pairing is a procedure during which we try to create a balance between the components of a dish and the characteristics of a wine in hopes of enhancing the flavour of both and getting the best out of the combination.

Menu A: Greek wines
1. Moschofilero: Mantinia Bosinakis / Arcadia
White, flowery, mineral and with a high acidity + Steamed mussels with tomato, basil & spring onions
2. Rose de Xinomavro: Thymiopoulos / Naousa
Red fruits, tomato and caramel essences + Octopus carpaccio with fennel & orange
3. My Mavroudi young: Theodorakakos / Laconia
A fresh fruity mild summer red wine + Grilled salmon with panzarella salad
4. Samos Grand Cru: Muscat
Natural sweet wine with a long aftertaste of marmelade and grape, refreshing acidity and high alcohol + Lemon cream with fresh fruits, lemongrass syrup and biscuit crumble
MENU B: International wines
1. Mauro: Chardonnay / Puglia, Italy
A fruity and complex organic wine, aged in oak barrels + Grilled zucchini & almira weeds, smoked almond & matured goat cheese
2. Tempranillo: Casa Primicia, Joven Tinto / Spain
A full-bodied red wine, with a nose of cherry, fig, cedar, tobacco and leather + Beef meat balls on yoghurt sauce with roasted cherry tomatoes
3. Yoga Syrah Organic: Sicily, Italy
An intense red wine in terms of body, aromas and aftertaste. Smoke, black fruits and pepper spice + Marinated beef tagliata with mashed potatoes & parsley pesto
4. Tawny Port: Sehnora do Convento / Portugal
Dessert wine with characteristic aromas of fried cherries, nuts, cocoa powder and coffee + Crispy flute filled with chocolate cream & sour cherries
